Introduction

This rice bowl is so comforting and a quick & easy meal to put together!

We added some tomato sauce to the rice but it works well with plain rice if you don’t have / like tomato sauce.

We usually do our own meatballs and freeze most of them so it’s ready whenever we want some. You can use any meatball you like and but also vegetarian “meatballs” if you don’t want meat.

Preparation

  1. Start by cooking the rice, *follow the instructions on the package.*
  2. Once the rice is cooked, add some tomato sauce and mix.
  3. Depending on the type of meatballs you are using and how long it need to be cooked you might want to do it now. *We are using frozen meatballs so we usually just throw them in the microwave few minutes once everything else is ready.*
  4. Cut the zucchinis into slices, not too thin.
  5. Heat a saucepan, add some butter or oil to grease the pan and throw in the zucchini slices. *You want each slice to touch the saucepan, so consider doing several batches if needed.*
  6. Cook the zucchini slices until they are tender and slightly grilled, turn them to ensure both sides are grilled. *Once cooked, place on a paper towel to absorb any excess of grease.*
  7. In a bowl, place the rice at the bottom and on the top add the zucchinis slices and the meatballs. *Of course you can also just throw everything in a plate/bowl, it would taste the same ;)*
