Introduction

It's fun & colorful, spring rolls will look great when you have some friends coming over & they are so refreshing, perfect in summer as party appetizer or light meal!
It's actually pretty easy & quick to make. You can also vary the ingredients based on what you have available at home or want to eat - *search for "Spring Rolls" to find out the different versions we have tried!*

Ingredients
Spring Rolls
- Rice Paper Sheets (Spring Roll wrapper): 6
- Vermicelli rice: 57 g | 2 oz
- Cucumber: 1
- Carrots: 2
- Salad leaves: a dozen
- Shrimps: 12
- Onion: 1/4 of a large one

Preparation
Spring Rolls
- Start by preparing the filling with the ingredients that need to be cooked. Cook the shrimps and set aside to let it cool down.
- In a saucepan, bring water to a boil and cook the rice vermicelli according to package instructions. Drain & rince under cold water & set aside to let cool down.
- Then, prepare the veggies: peel and cut the veggies. Leave the salad leaves as it it, they will help holding together the other ingredients. Cut carrots & cucumber into matchsticks. Cut the onions into small pieces.
- Set up all the ingredients next to you. In a large plate, put in some lukewarm water and add in a rice paper sheet. Let in for 1 minute, until the sheet become soft (and sticky). Transfer the rice sheet onto a clean kitchen towel (it will help absorb the humidity).
- Now place the filling at the center of rice sheet, start with the salad leaves and then pile up the veggies and rice vermicelli. Top with shrimps.

Start by rolling the piece of rice sheet that is in front of you over the filling. Bring back the edges on top of the filling and roll it over to close the spring roll! And voila! You have one spring roll ready! *Repeat step 5-7 for each spring roll.*
