Introduction

This recipe has been inspired by the Minute orange cake of Yummix (from the book Illico Presto). If you don’t know her: she has a lot of recipes that you can make with a Thermomix!

After seeing this cake, we couldn’t resist and started recipe testing for an orange cake that could also be made without a Thermomix (if you have a Thermomix, we added specific indications in the recipe below, it’s definitely faster).

You’ll need a mixer (we used a Kitchenaid hand mixer) and a blender (our old Ninja blender made its comeback specially for this recipe!).

We love that this recipe uses the whole orange! It’s a super tasty and also very moist cake! To give it an additional kick, throw in a dozen of kumquats along with the orange!

Preparation

  1. Preheat oven to 395F (200C).
  2. With a mixer, cream butter & sugar. This should take a few minutes. *If you have a Thermomix: 3min, speed 3 with the butterfly whisk.*
  3. Remove the stem of the orange and cut it in quarters. Blend with a blender until it becomes a purée, you should still see little pieces of zest. Blend as long as needed, stopping to scrape the edges in between to optimize the blending process. *If you have some kumquat, throw them in the blender as well.*
  4. Add the orange purée to the butter & sugar mix. Add the eggs. Mix well (highly recommend to continue mixing with the mixer). *If you have a Thermomix: remove the butterfly whisk, scrape the edges of the bowl and add the orange quarters (and kumquats) and eggs and mix speed 6 during 1min.*
  5. Add all-purpose flour, almond flour and baking powder. Mix well with the mixer. *If you have a Thermomix, add the flours and baking powder, mix speed4 during 20sec.*
  6. Grease a cake pan and transfer the batter to the cake pan.
  7. Bake for 50-60 min and lower the oven temperature to 355F (180C) immediately after placing the cake into the oven. *Test with a toothpick if center is baked, when toothpick is dry, it’s ready!*
