Introduction
Langues de chat - literally cat’s tongues - are French cookies, pretty easy to make and very crispy.
They are going well along with coffee or tea break.
Recipe from Les Yeux Grognons, to what I added some vanilla extract.

Ingredients
- Powder sugar: 65g | 2.3oz | 1/2 cup
- Egg white: 2
- Salt: a pinch
- Butter, softened: 65g | 2.3oz | 4 + 1/2 tbsp
- Vanilla extract: 1 cac | 1 tsp
- All-purpose flour: 80g | 2.8oz | 1/2 cup + 3 tbsp

Preparation
Before starting, make sure the butter is softened and the egg whites are at room temperature.
- Preheat oven to to 355 F (180 C).
- In a medium bowl, with a spatula, combine softened butter with powder sugar.
- Then, add the egg whites & vanilla extract. Mix pretty fast to get a smooth mixture.
- Finally, sift the flour and add to the mixture. Mix again and transfer to a pastry bag.
- Press dough onto baking sheet or mat, about 3 inches length, like a lady finger. Leave space between each one, as the cookies will spread during baking
- if you don't have a pastry bag, you can use a freezer bag and cut one corner.
- Bake for 8-10 minutes, until the the edges are lightly browned. Let cool on a cookie rack.
- Store for several days in a metal box.
