Ingredients
- Butter: 60g | 2.1oz | 4 tbsp
- Sugar: 50g | 1.7oz | 1/4 cup
- Almond Flour: 60g | 2.1oz | 2/3 cup
- All purpose Flour: 20g | 0.7oz | 3 tbsp
*- substitute with same amount of Gluten free flour if you want GF financiers*
- Egg Whites: 2
- Cherry: 15-20
- Optional Add-Ins

Preparation
- Preheat oven to 355F (180C).
- In a small saucepan, heat butter until melted and smelling like hazelnut. Let cool down.
- While butter is cooling down, prepare the cherries (wash, remove seed and cut in 4 pieces).
- In a large bowl, mix, preferably with a wooden spoon: sugar, almond flour and all purpose flour (or GF flour for GF financiers).
- Add the 2 egg whites.
- Add the melted butter.
- Optional - to reinforce the almond taste, add almond extract.
- Transfer to financier pan or muffin pan (if using muffin pan, fill only the bottom part). Add the cherry pieces.
- Bake for 10-20 min until top is lightly golden.
- Let cool down before eating!
