Preparation

  1. Preheat oven to 355F (180C).
  2. In a small saucepan, heat butter until melted and smelling like hazelnut. Let cool down.
  3. While butter is cooling down, prepare the cherries (wash, remove seed and cut in 4 pieces).
  4. In a large bowl, mix, preferably with a wooden spoon: sugar, almond flour and all purpose flour (or GF flour for GF financiers).
  5. Add the 2 egg whites.
  6. Add the melted butter.
  7. Optional - to reinforce the almond taste, add almond extract.
  8. Transfer to financier pan or muffin pan (if using muffin pan, fill only the bottom part). Add the cherry pieces.
  9. Bake for 10-20 min until top is lightly golden.
  10. Let cool down before eating!
