Introduction

Classic apples pie never disappoints! There is an applesauce layer under the apples slices and that’s all!

The layer of applesauce prevents the pie from being too dry and is not as heavy as adding a layer of cream or custard.

This recipe is egg free and can be gluten free if you swap the regular pie crust with a gluten free pie crust.

Preparation

  1. Pre heat your oven to 395 F (200C).
  2. Start with the pie crust, especially if you’re making your own pie crust *We used our [All Butter pie crust](<https://data.butteristhenewdiet.com/All-Butter-Pastry-Crust-P-te-Bris-e-259f0720163b421da39c7aaab4c3b7b3>) recipe to which I added some vanilla extract and 1 tbsp (cac) of brown sugar.*
  3. Roll out the dough and place in a greased pie pan. Either pock some holes with a fork in the dough or cover with parchment paper and weights. This will help prevent dough from rising and will keep it flat. Bake for 10-20 minutes. Then set aside to let it cool down. The crust should be slightly baked but still very light.
  4. While the pie is in the oven, you can prepare the apple sauce. Peel and cut apples in large pieces. Place in a saucepan with 1-3 tablespoon of water, lemon juice squeeze, sugar and vanilla extract.   5. Transfer the apples in a blender and blend until smooth. Set aside to let cool down.
  6. Peel and cut remaining apples into slices. You can squeeze some lemon juice to preserver their bright color. Once they are all cut, you are ready to put the pie together.
  7. Spread applesauce on the crust and add apple slices on top.
  8. Bake for another 20 minutes.
  9. *Optional: if you want to have a glossy finish, wait until the pie is completely cool and brush with some syrup or with some melted jam.*
